The Dual Zone System for Large and XL Big Green Eggs unlocks the EGG’s unrivalled versatility. As well creating simple indirect and direct setups, it allows for the simultaneous use of multiple cooking modes. You can be grilling your meat on one side of the Dome, while roasting your potatoes on the other and leaving your gravy to bubble away above. The system’s essential structures and surfaces are included in the Dual Zone Essentials Kit, which now comes as standard with every Large and XL, and can also be purchased separately.
The Dual Zone System is an upgrade on the old EGGspander System. All Dual Zone cooking surfaces remain compatible with the ConvEGGtor Basket, which was used in the old system, as well as with the new Dual Zone Basket.
The basic Dual Zone set ups
Step one: Install the Dual Zone Basket
The Dual Zone Basket (or the ConvEGGtor Basket, if you’re using the old system) provides two levels onto which cooking surfaces can be installed. The first step of any Dual Zone cook is to simply insert this basket into the EGG.
Step two: Add your Half Moon Surfaces
Once the basket is in place, the system’s semi-circular cooking surfaces can be dropped in at two different heights. The Dual Zone Essentials Kit comes with 2 x Half Moon Ceramic Deflectors and 2 x Half Moon Stainless Steel Grids. Other compatible surfaces, such as the Half Moon Cast Iron Searing Grid and Half Moon Cast Iron Plancha Griddle, are also available.
Step three: Add your Multi-Level Rack
For increased cooking space and to add an extra dimension to your cook, you have the option of fixing a 2-Piece Multi-Level Rack to the top of the basket. Away from the coals, this elevated rack is good for gently heating dishes or keeping them warm.
