In the unlikely event that you have any brisket leftover from a previous cook, we highly recommend turning it into moreish burnt ends.

Toss the brisket in the cooking liquor (you could use good beef stock if you have some) and the BBQ sauce and place in a roasting tray. Cook for an hour, stirring and turning regularly.

If you like a pronounced smoky flavour you could add a handful of Wood Chips for the whole cooking time. We don’t tend to bother though.
